This Hamburger Potato Casserole makes a perfect freezer meal. You can easily make multiple casseroles at once to stash in the freezer. Then if you have a friend who needs a meal, you can quickly thaw and bake one or take it to the family as a freezer meal. It is a great meal to take to new Moms or shut ins since you have meat, starch and vegetables all in one dish.

As a matter of fact, this week I took this hamburger potato casserole to friends that recently had a baby. I took frozen broccoli to go with it, so it’s something she could do quickly in between feeding her baby and tending her other children.

While is isn’t the most attractive dish you’ve ever seen, it tends to be a crowd-pleaser.

This recipe is a one dish meal that makes a great freezer meal too. Make several and stash in the freezer for a busy weeknight or a freezer meal for a friend.

Ingredients
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 cup sour cream
  • 1 cup heavy cream
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 2 cups shredded cheddar cheese, divided
  • 4 cups frozen hash brown potatoes, thawed
Instructions
  1. Brown ground beef, onion, and green pepper. Drain if needed. 

  2. Add sour cream, heavy cream, salt, black pepper, garlic powder, and 1 cup of cheese. 

  3. Stir in thawed hash brown potatoes. 

  4. Pour mixture into a greased 3 quart baking dish. Sprinkle with remaining 1 cup of cheese. Bake at 350 degrees for 50-60 minutes until hot and bubbly.

Recipe Notes

To make this a freezer meal:

Cover unbaked casserole tightly with foil and place in the freezer. Thaw casserole in refrigerator overnight. Bake at 350° for 1 hour and 15 minutes or until hot and bubbly.

Alternatively, place frozen casserole in oven. Turn oven to 250° and bake for 2 hours until hot and bubbly.

When I take this meal to friends, I typically take one green veggie to go with it. Canned or frozen green beans, peas, or frozen broccoli all make a tasty side dish for this casserole without much extra work for you or for the person you are delivering the meal to.
