Recipes Using All Purpose Baking Mix

Recipes using all purpose baking mix can make a homemade breakfast a reality on busy mornings. I’m sharing two of my family’s favorite recipes-baking mix cinnamon rolls and drop danish.

Baking Mix Cinnamon rolls

These cinnamon rolls are more like a cross between a biscuit and a cinnamon roll, but my family never complains when they show up on our breakfast table. They are perfect when you want a cinnamon roll, but don’t have time to wait on yeast dough to rise. They come together quickly if you already have a batch of homemade baking mix on hand.

These are quite rustic in appearance so don’t expect them to be as pretty as yeast based cinnamon rolls. But they are still very tasty.

Baking Mix Cinnamon Rolls

A cross between a biscuit and a cinnamon roll, these mix up quickly with all purpose baking mix on hand.

Ingredients
  • 1/4 cup butter softened
  • 4 cups homemade baking mix
  • 3/4 cup milk
  • 1/2 cup sugar
  • 1 Tablespoon cinnamon
Glaze
  • 3/4 cup powdered sugar
  • 1 Tablespoon milk
Instructions
  1. Set 1/4 cup butter out to soften. If baking mix has been stored in the freezer, measure out 4 cups to come to room temperature.

  2. Preheat oven to 400 degrees. Grease 2 8″ or 9″ round cake pans. 

  3. Once baking mix is at room temperature, stir milk into baking mix. Allow to rest a couple minutes, especially if there is whole wheat flour in the mix. If dough is sticky add a bit more baking mix. If dough is too stiff, add a little more milk, 1 Tablespoon at a time.

  4. Sprinkle your work surface with flour and roll or pat the dough into a 18″ x 10″ rectangle. Spread softened butter over dough. Sprinkle with sugar and then cinnamon.

  5. Roll up starting with the long side. (You’ll have an 18″ log when done.) Don’t worry if the dough tears a bit. These are rustic looking. (See my pictures!) Cut into 16-18 1″ slices. Place 8 or 9 slices in each cake pan. Bake for 15-20 minutes or until cooked through.

  6. Allow to cool about 5 minutes. Mix glaze ingredients. Drizzle over cinnamon rolls.

Drop Danish

These drop danish are so easy to make using our homemade baking mix. You can use any flavor of jam you would like. They also freeze very well. (See notes below for how I do it.)

Homemade Drop Danish

A simple danish recipe using homemade baking mix.

Servings: 16
Ingredients
  • 4 cups homemade baking mix
  • 1/4 cup sugar
  • 1 1/3 cups milk
  • 3/4-1 cup jam, any flavor
Glaze
  • 3/4 cup powdered sugar
  • 1 Tablespoon milk
Instructions
  1. Mix baking mix and sugar together. Stir in milk until a soft dough forms.

  2. Drop dough into 18 mounds on 2 large greased cookie sheets leaving about two inches between each danish. They will look small, but they spread quite a bit. Make a well in the center of each mound. Drop a small amount of jam into each well (approximately 2 teaspoons). Bake at 350 degrees for 10-15 minutes. 

  3. Mix glaze ingredients together. Drizzle over danish.

Freezer friendly breakfasts

Both of these recipes using all purpose baking mix make great breakfast freezer meals. They can be frozen before or after baking, though I prefer to freeze before baking because I feel like they taste fresher that way.

To freeze the cinnamon rolls, follow the recipe all the way through cutting them. Place them in a pan that is both freezer and oven safe, such as a metal cake pan, stoneware pan, or disposable aluminum pan.

If you are freezing the drop danish, I find it easier to drop the dough on parchment paper before freezing. You can add the jam now or later. Once frozen, transfer to a freezer bag for long term storage.

Tools I use to make these recipes easier

There are a few tools that I use to make baking easier. First, I love having a pastry mat. It makes rolling out the dough so much easier. There are many types on the market today, but I prefer the silicone type. I purchased mine from Aldi, but it is similar to this one.

Another tool I love is a bench scraper. They make cutting the cinnamon rolls so easy. I also use it to clean the excess flour off my pastry mat when I’m done.

Finally a rolling pin is a necessity in my kitchen. With so many different varieties like a french rolling pin, a standard one, or a special pastry roller, choosing one is a matter of preference. I have a standard rolling pin and the Pampered Chef one and I actually use both, depending on what I’m making. I tend to use the standard one for cinnamon rolls and such, but I love the Pampered Chef one for pizza crusts. It’s also easier to clean up since it is dishwasher safe.

(Of course, both of these recipes can be made with tools you already have on hand. The cinnamon roll dough can be patted out onto the counter and you can use a knife to cut the dough into rolls.?)
