A quick, easy meal that is a great way to use up leftovers in your refrigerator.
Heat olive oil and butter in a skillet until butter is melted. Add onion and bell pepper and saute until almost tender. Stir in garlic and cook for 1 minute.
Add hash browns and cook, stirring occasionally, for about 10 minutes until potatoes start to brown in places.
Add your cooked meat, salt, and pepper. Cook until meat is hot. Top with cheese and allow cheese to melt.
*Meat can include any of the following: chopped turkey, chopped ham, leftover chicken, bacon, sausage, ground beef, or scrambled eggs.
I serve this with hot sauce and ketchup at the table.
