Place potato cubes in a large stock pot. Cover with water. Bring to a boil. Simmer potatoes for 12-15 minutes or until tender. Drain the potatoes and set aside.
In a large bowl, combine remaining ingredients (onions through black pepper). Fold in potatoes while they are still warm. Taste. Add additional salt if needed. Refrigerate at least 2 hours until chilled. Stir again just before serving.
